Sugarcane is a tropical plant of Indian origin with multiple nutritional benefits such as vitamins and minerals that provide energy and strengthen both bones and the immune system. But its contributions are not only important for people’s health, but also for the environment.
In Misiones, this plant takes on significant importance thanks to the food that comes from it, a combination of tradition with new consumption trends: mascabo sugar. This sweetener, crafted manually without chemical refining processes, preserves the flavor and nutrients of sugarcane while paving the way for a healthier diet.
Mascabo represents more than an alternative to white sugar, as it is also the result of knowledge passed down through generations. Thanks to its moist texture, amber color, and aroma, this food has become a valued ingredient in artisanal baking and pastry, as well as a symbol of how culture and good practices can generate economic and social value.
Its significant value is partly due to its production process, which, although simple, requires care and expertise. First, fresh juice is obtained from freshly harvested sugarcane, which is then clarified and concentrated through cooking after grinding and filtering. Depending on the achieved point, mascabo sugar or cane syrup, another traditional derivative of great value, can be obtained.

The Importance of Artisanal Production
In the province of Misiones, the National Institute of Agricultural Technology (INTA) plays a key role in the artisanal production of mascabo and cane syrup, supporting sugarcane families with training, equipment improvements, and technical assistance to enhance the process.
In this regard, the teams from INTA Misiones and INTA Tucumán have created a technical booklet on the artisanal production of these products, which will soon be available in the institution’s digital repository for free access.
This booklet will include scientific knowledge and sustainable practices, making it useful for both farmers and extension technicians who support them.
