Jorge Ferri and master pizza maker Marcelo Palmieri lead a pioneering project in the region. Palmieri ensures that “this is Quilmes pizza”, highlighting the innovative and artisanal character of the product, it is the first pizzeria using hemp flour in Latin America.

Creating this pizza was a challenge, as there were no manuals or clear recipes for using hemp flour in dough. “We searched, tried, changed things, and here it is,” Palmieri commented, emphasizing the experimental process that culminated in this gastronomic alchemy.

The idea arose during the 2020 pandemic, when Ferri and Mariano Percivale began exploring the possibilities of hemp in the kitchen. What started as a dreamy idea turned into a reality that today delights pizza lovers.

Benefits of Hemp Flour

Hemp flour is obtained from the seeds of industrial hemp, a plant from the cannabis family without psychoactive properties. It is rich in proteins, fiber, and essential fatty acids such as omega 3 and 6, making it a nutritious alternative to traditional wheat flour. Additionally, as it does not contain gluten, it is an excellent option for people with gluten intolerances or sensitivities.

Ferri emphasizes that this flour “doesn’t stick,” but it provides multiple health benefits and a unique flavor without sacrificing the pleasure of enjoying a good pizza. Hemp flour can improve overall health, providing sustained energy, supporting immune function, and promoting good digestion.

The establishment, located at the corner of 25 de Mayo and Alvear streets, in the heart of Quilmes, opens from Tuesday to Friday from 9 am to 2 pm and from Tuesday to Sunday from 6 pm to 1 am.
